CHEMEX POUR OVER

German born inventor, Dr Peter Schlumbohm invented the Chemex Pour Over  in 1941. People really love Chemex Pour Over as we do at American Woman Coffee.
YOU'LL NEED-
A SMALL OR LARGE CHEMEX POUR OVER
CHEMEX BONDED FILTERS
FRESH ROASTED COFFEE
BURR GRINDER: Spice or blade grinders are not recommended due to inconsistent grind size
GOOSE NECK KETTLE

RECIPE:
COFFEE GRIND: MEDIUM COARSE
COFFEE: For a small Chemex, 22 grams or 2-3 heaping Tablespoons fresh ground coffee. For a large Chemex 41 grams or 4-5 heaping Tablespoons.
WATER: For a small Chemex, 12 ounces. For a large Chemex, 24 ounces. Use purified fresh water. Well and distilled water are not recommended. Begin heating water.

Place filter in Chemex. Make sure the 3-layered side of filter is placed against  spout.

Preheat the Chemex and rinse filter by pouring hot water through them. Gently swirl. Take care not to break or crack it by accidentally hitting glass on sink or faucet. It happens. We cried.

Pour out water and re-position wet, rinsed filter. We always pre-rinse our filters. Always.

Put ground coffee in the filter. Ask Siri to set a 30 second timer.

Pre-wet grounds by gently pouring one third of the water over the coffee, wetting all grounds thoroughly. Stop pouring.

Start timer. Allow coffee to bloom and de-gas for 30 seconds before adding more water. Patience.

SLOWLY pour remaining water over the coffee in a circular pattern.
Overall brew time should be 4-5 minutes.

Lift out filter and grinds. Serve immediately.
